For the month of June, I am sharing a recipe for a quick and delicious taco salad. This is a taco salad that will make any fiesta a hit.
Ingredients:
- 1 pound (450g) ground beef or turkey
- 1 packet of taco seasoning
- 1 head of lettuce, shredded
- 1 cup cherry tomatoes, halved
- 1 cup canned black beans, rinsed and drained
- 1 cup canned corn kernels, rinsed and drained
- 1/2 cup shredded cheddar cheese
- 1/2 cup sliced black olives (optional)
- 1/4 cup diced red onion (optional)
- Tortilla chips, crushed
- Salsa, sour cream, and guacamole for serving
Instructions:
- In a large skillet, cook the ground beef or turkey over medium heat until browned. Break it up into crumbles while cooking.
- Drain any excess fat from the skillet and add the taco seasoning packet. Follow the instructions on the packet for seasoning the meat.
- Once the meat is cooked and seasoned, please remove it from the heat and let it cool slightly.
- In a large bowl, combine the shredded lettuce, cherry tomatoes, black beans, corn, shredded cheddar cheese, sliced black olives, and diced red onion (if using).
- Add the cooked taco meat to the bowl and mix all the ingredients until well mixed.
- Serve the taco salad in individual bowls or plates. Top each serving with crushed tortilla chips.
- Add salsa, sour cream, and guacamole on top, or serve them on the side.
